Low Carb Breakfast Casserole

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • 2 lbs ground sausage
  • 8 ounces softened cream cheese
  • 1/2 small onion, diced
  • 2 (7 ounce) cans diced green chilies
  • 12 beaten eggs
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup shredded cheddar cheese

Recipe

  • 1 preheat oven to 350.
  • 2 spray 9x13 pan with non-stick cooking spray.
  • 3 brown sausage and drain excess grease.
  • 4 press sausage into bottom of pan.
  • 5 break cream cheese into pieces and evenly distribute on top of sausage.
  • 6 sprinkle with onions and peppers.
  • 7 our eggs over the sausage mixture.
  • 8 add shredded cheese to the top.
  • 9 bake for 25 minutes or until eggs are just set.
  • 10 allow to cool for about 5 minutes before cutting.
