Olive Pepperoni Muffins

Total Time: 45 mins Preparation Time: 20 mins Cook Time: 25 mins

Ingredients

  • 3 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon baking soda
  • 1 (8 ounce) package cream cheese, softened
  • 2 eggs
  • 1 cup milk, plus
  • 2 tablespoons milk
  • 1/4 cup vegetable oil
  • 1 (3 1/2 ounce) package pepperoni, diced
  • 1/4 cup chopped stuffed olives

Recipe

  • 1 in a large bowl combine the flour,sugar,baking powder,salt,oregano and baking soda.
  • 2 in a mixing bowl, beat the cream cheese,eggs, milk and oil until smooth.
  • 3 stir into dry ingredients just until moistened.
  • 4 fold in the pepperoni and olives.
  • 5 fill greased or paper-lined muffin cups three-fourths full.
  • 6 bake at 350 for 20-25 minutes or until a toothpick comes out clean.
  • 7 cool for 5 minutes before removing from pan.
