Savory Squash Muffins

Ingredients

  • Servings: 9
  • 1 1/2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 3/4 cup yellow squash, grated
  • 3/4 cup zucchini, grated
  • 2 cups monterey jack pepper cheese, shredded

Recipe

  • 1 preheat oven to 350. lightly grease 9 muffin cups.
