Ingredients

- 1 1/2 cups all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup vegetable oil
- 2 large eggs
- 3/4 cup yellow squash, grated
- 3/4 cup zucchini, grated
- 2 cups monterey jack pepper cheese, shredded
Recipe
- 1 preheat oven to 350. lightly grease 9 muffin cups.
- 2 in a large bowl, combine flour, sugar, baking powder, baking soda, and salt.
- 3 add oil and eggs, beating at medium-low speed with an electric mixer until combined.
- 4 add squashes, stirring to combine.
- 5 add cheese, stirring to combine.
