Ingredients

- 4 (130 g) mushrooms (flat well opened)
- 200 g ham (finely sliced or salami, hot if you like bite)
- 1/4 cup olive oil
- 3/4 cup cheddar cheese (tasty coarsely grated)
- 4 eggs (large)
Recipe
- 1 preheat oven to 200c (180c fan forced).
- 2 arrange mushrooms and ham in a 27cm x 17cm (base measurement) ovenproof dish.
- 3 drizzle the mushrooms with oil.
- 4 bake for 10 minutes.
- 5 sprinkle mushrooms with cheese and bake for 5 minutes more.
- 6 carefully crack eggs onto the ham and bake for 5 minutes more or until cheese is melted and eggs cooked to your liking.
- 7 season with salt and pepper and serve at once.
