Mascarpone Substitute

Ingredients

  • 3 egg yolks
  • 1/2 cup sugar
  • 1/3 cup half-and-half cream
  • 1 (15 ounce) container ricotta cheese
  • 1 cup heavy whipping cream, whipped (35%, measure 1 cup after whipping)

Recipe

  • 1 in a heavy-bottomed saucepan whisk egg yolks, sugar and cream; simmer over low heat for 2-3 minutes then cool.
  • 2 fold in ricotta cheese and whipped cream until blended.
