Spinach Quinoa Breakfast Bake

Ingredients

- 6 large eggs
- 2 cups cottage cheese
- 10 ounces frozen spinach, thawed and drained
- 1 1/4 cups cooked quinoa
- 1 cup chopped green onion
- 1 cup crumbled feta cheese
- 1/8 teaspoon black pepper
Recipe
- 1 preheat oven to 350.
- 2 in blender, combine eggs and cottage cheese. puree until smooth.
- 3 transfer to a medium bowl and stir in spinach, green onions, quinoa, feta and pepper. spread into glass baking dish sprayed with cooking spray.
- 4 bake for 35-40 minutes or until golden brown and set.
