Spinach Quinoa Breakfast Bake

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • Servings: 8
  • 6 large eggs
  • 2 cups cottage cheese
  • 10 ounces frozen spinach, thawed and drained
  • 1 1/4 cups cooked quinoa
  • 1 cup chopped green onion
  • 1 cup crumbled feta cheese
  • 1/8 teaspoon black pepper

Recipe

  • 1 preheat oven to 350.
  • 2 in blender, combine eggs and cottage cheese. puree until smooth.
  • 3 transfer to a medium bowl and stir in spinach, green onions, quinoa, feta and pepper. spread into glass baking dish sprayed with cooking spray.
  • 4 bake for 35-40 minutes or until golden brown and set.
