Tofu Greek Salad

Ingredients
- Servings: 6
- 1 english cucumber, unpeeled & cubed (1/2 "inch" cubes)
- 2 medium tomatoes, cubed
- 1 green sweet pepper, cubed
- 1 medium red onion, chopped finely
- 1/2 cup parsley, chopped
- 2 cups feta cheese, save some to garnish the salads
- 1 cup black olives, pitted & sliced
- 1 package sunrise soft tofu
- 1/4 cup red wine vinegar
- 1/3 cup olive oil
- 2 cloves garlic
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon sugar
- salt & pepper
Recipe
- 1 in a food processor blend all the dressing ingredients until smooth.
- 2 mix all the veggies together in a bowl and some of the feta cheese.
- 3 toss the veggies with the dressing.
- 4 garnish with the remaining feta.
- 5 chill and serve.
