Tofu Greek Salad

Ingredients

  • Servings: 6
  • 1 english cucumber, unpeeled & cubed (1/2 "inch" cubes)
  • 2 medium tomatoes, cubed
  • 1 green sweet pepper, cubed
  • 1 medium red onion, chopped finely
  • 1/2 cup parsley, chopped
  • 2 cups feta cheese, save some to garnish the salads
  • 1 cup black olives, pitted & sliced
  • 1 package sunrise soft tofu
  • 1/4 cup red wine vinegar
  • 1/3 cup olive oil
  • 2 cloves garlic
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon sugar
  • salt & pepper

Recipe

  • 1 in a food processor blend all the dressing ingredients until smooth.
  • 2 mix all the veggies together in a bowl and some of the feta cheese.
  • 3 toss the veggies with the dressing.
  • 4 garnish with the remaining feta.
  • 5 chill and serve.
